Vegetable Waffle Recipe

In a blender, puree soy milk, veggies, oil and vanilla. In a bowl, add the 2 cups of flour, sugar, corn starch, baking soda, salt, and the flax meal. Combine the blended mixture with the dry ingredients and whisk together to form a thick batter. A thin batter will stick to the waffle iron and make a mess not waffles. Add as much of the third cup of flour as needed to get the right consistency.

Pour batter onto the hot waffle iron and follow your waffle iron instructions to get the waffles just right.
