Collard & Oat Waffle Recipe

In a blender, puree water, oats, collards, carrot and margarine. In a bowl, add flour, sugar, baking powder, salt, cinnamon, and nutmeg. Combine the blended mixture with the dry ingredients and whisk together to form a thick batter. Depending on humidity & water content of the veggies, add a little more water or flour to get the right consistency.

Pour batter onto the hot waffle iron and follow your waffle iron instructions to get the waffles just right.

Yields 12 waffles. Extra waffles can be frozen and reheated in the toaster.
